Air-Fryer Bacon-Peanut Butter Cornbread Muffins
Ingredients
For the Muffins:

1 cup yellow cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup buttermilk
-
2 large eggs, beaten

6 tablespoons butter, melted

6 strips bacon, cooked crispy and chopped
For the Peanut Butter Swirl:

1/3 cup creamy peanut butter
-
2 tablespoons honey
-
1/2 cup roasted peanuts, chopped (optional, for topping)
Instructions

Prep the bacon: Cook the bacon until crispy, then chop it into small pieces and set aside

Mix dry ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt

Combine wet ingredients: In a separate bowl, whisk together the buttermilk, beaten eggs, and melted butter until well combined

Make the batter: Pour the wet ingredients into the dry ingredients and stir just until combined (don’t overmix)

Add bacon: Gently fold the chopped crispy bacon into the batter

Prepare peanut butter swirl: In a small bowl, mix the peanut butter and honey together until smooth

Preheat air fryer: Set your air fryer to 350°F (180°C)

Fill muffin cups: Place silicone muffin cups in the air fryer basket and fill each about 2/3 full with batter

Add swirl: Drop small dollops of the peanut butter-honey mixture on top of each muffin and use a toothpick to swirl it into the batter

Top with peanuts: Sprinkle chopped roasted peanuts on top if desired

Air fry: Cook at 350°F (180°C) for 10-12 minutes, until golden brown and a toothpick inserted in the center comes out clean
