Apple Cheddar Soup
Ingredients

2 tbsp butter

1 onion, chopped

2 cloves garlic, minced

2 apples, peeled, cored, and diced

2 medium carrots, peeled and chopped

2 tbsp all-purpose flour

4 cups chicken or vegetable broth

1 tsp thyme

Salt and black pepper, to taste

1½ cups sharp cheddar cheese, shredded

½ cup heavy cream or milk
-
Optional garnish: chopped parsley or extra shredded cheddar
Instructions

In a large pot, melt butter over medium heat. Sauté onion and garlic until soft.

Add apples and carrots; cook 5 minutes until slightly softened.

Sprinkle flour over mixture; stir for 1–2 minutes to remove raw taste.

Gradually add broth, stirring constantly. Add thyme, salt, and pepper. Bring to a boil, then simmer 15–20 minutes until vegetables are tender.

Use an immersion blender (or regular blender in batches) to puree soup until smooth.

Stir in cheddar cheese and cream; cook on low until cheese is melted and soup is creamy.

Serve warm, garnished with parsley or extra cheese.
