Apple Fritter Bites
Ingredients:

1 cup all-purpose flour

1/4 cup sugar

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg (optional)

1/2 cup milk
-
1 egg
-
1 teaspoon vanilla extract

1 medium apple, peeled, cored, and finely diced

Oil for frying (vegetable or canola)
For the glaze:

1 cup powdered sugar
-
2 tablespoons milk
-
1/2 teaspoon vanilla extract
Instructions:

In a bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.

In another bowl, whisk milk, egg, and vanilla. Pour wet ingredients into dry and stir until just combined. Fold in diced apple.

Heat about 2 inches of oil in a deep skillet or pot to 350°F (175°C).

Drop spoonfuls of batter into hot oil, frying a few at a time. Cook 2–3 minutes per side until golden brown. Remove and drain on paper towels.

In a small bowl, whisk together powdered sugar, milk, and vanilla to make the glaze. Drizzle over warm fritter bites or dip as desired.
