Asparagus with Blue Cheese and Bacon
Ingredients:

1 lb fresh asparagus, trimmed

4 slices bacon, cooked and crumbled

1/3 cup crumbled blue cheese

2 tbsp olive oil
-
1 tbsp lemon juice
-
1 clove garlic, minced
-
Salt and black pepper, to taste

Optional: crushed red pepper for a little spark
Instructions:

Preheat oven to 400°F (200°C).

Spread asparagus on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss gently.

Roast 12 to 15 minutes, until tender but slightly crisp.

Remove from the oven and immediately sprinkle the hot asparagus with blue cheese so it melts a bit.

Top with crumbled bacon and drizzle with lemon juice.

Add garlic and optional red pepper if you like a little kick. Serve warm and feel extremely pleased with yourself.
