Bacon & Cheese Crustless Quiche

Ingredients:

  • 6 large eggs

  • 1 cup milk or heavy cream

  • 6 slices bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded Swiss cheese (optional)

  • 1 small onion, finely diced

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon garlic powder

  • 2 tablespoons chopped fresh parsley (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.

  2. In a skillet, cook bacon until crispy. Remove and crumble. Use a little bacon fat to sauté onions until soft (optional).

  3. In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.

  4. Spread bacon, onions, and cheese evenly in the prepared dish. Pour egg mixture over the top.

  5. Bake 30–35 minutes, or until the center is set and the top is lightly golden.

  6. Let quiche cool 5–10 minutes before slicing. Sprinkle with fresh parsley if desired.
