Baked Sweet Potato Fries with Ketchup and Fry Sauce
Ingredients:
For the Fries:

2 large sweet potatoes, peeled and cut into thin fries

2 tablespoons cornstarch

2 tablespoons olive oil
-
½ teaspoon paprika
-
½ teaspoon garlic powder
-
Salt and black pepper, to taste
For the Fry Sauce:

½ cup mayonnaise
-
3 tablespoons ketchup
-
1 teaspoon vinegar or pickle juice
-
½ teaspoon smoked paprika (optional)

Pinch of salt
For Serving:

Extra ketchup on the side 🍅
Instructions:

Preheat oven:
Set oven to 425°F (220°C). Line a baking sheet with parchment paper. -
Prep the fries:
Peel and cut sweet potatoes into even sticks. Soak them in cold water for 30 minutes (this removes starch for crispier fries).
Drain and pat completely dry. -
Coat:
Toss the fries with cornstarch until lightly coated.
Drizzle with olive oil, add paprika, garlic powder, salt, and pepper. Toss again to coat evenly. -
Bake:
Spread fries in a single layer on the baking sheet (don’t overcrowd!).
Bake 20 minutes, flip, then bake another 10–15 minutes until crispy and golden at the edges. -
Make the fry sauce:
In a bowl, mix mayo, ketchup, vinegar, smoked paprika, and a pinch of salt. Stir until smooth and creamy. -
