Balsamic Peach Pork Chops with Blue Cheese 🍑🥩🧀✨

Ingredients (Serves 4)

  • 4 bone-in pork chops (about 1 inch thick)

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • 2 fresh peaches, sliced

  • 1 small red onion, thinly sliced

  • 2 tbsp butter

  • ⅓ cup balsamic vinegar

  • 2 tbsp honey (or brown sugar)

  • ½ tsp fresh thyme (or rosemary)

  • ½ cup crumbled blue cheese

  • Fresh parsley, for garnish


Instructions

  1. Prepare the pork chops:

    • Pat pork chops dry and season generously with salt and pepper.

    • Heat olive oil in a skillet over medium-high heat.

    • Sear pork chops 3–4 minutes per side until golden brown and cooked through (internal temp 145°F/63°C).

    • Remove from pan, tent with foil, and rest.

  2. Make the peach balsamic glaze:

    • In the same skillet, melt butter.

    • Add red onion and peaches, sauté until softened and caramelized (about 5 minutes).

    • Stir in balsamic vinegar, honey, and thyme.

    • Simmer 3–4 minutes until glaze thickens slightly.

  3. Assemble the dish:

    • Return pork chops to skillet, spoon peach balsamic mixture over top.

    • Sprinkle with crumbled blue cheese.

    • Let everything warm together for 1–2 minutes.

  4. Serve:

    • Plate pork chops with peaches and glaze.

    • Garnish with parsley.

    • Serve with roasted potatoes, mashed cauliflower, or a fresh green salad.
