Balsamic Peach Pork Chops with Blue Cheese 🍑🥩🧀✨
Ingredients (Serves 4)

4 bone-in pork chops (about 1 inch thick)

2 tbsp olive oil

Salt & black pepper, to taste

2 fresh peaches, sliced
-
1 small red onion, thinly sliced
-
2 tbsp butter
-
⅓ cup balsamic vinegar
-
2 tbsp honey (or brown sugar)
-
½ tsp fresh thyme (or rosemary)
-
½ cup crumbled blue cheese
-
Fresh parsley, for garnish
Instructions

Prepare the pork chops:

Pat pork chops dry and season generously with salt and pepper.

Heat olive oil in a skillet over medium-high heat.

Sear pork chops 3–4 minutes per side until golden brown and cooked through (internal temp 145°F/63°C).

Remove from pan, tent with foil, and rest.

Make the peach balsamic glaze:

In the same skillet, melt butter.
-
Add red onion and peaches, sauté until softened and caramelized (about 5 minutes).

Stir in balsamic vinegar, honey, and thyme.

Simmer 3–4 minutes until glaze thickens slightly.

Assemble the dish:

Return pork chops to skillet, spoon peach balsamic mixture over top.

Sprinkle with crumbled blue cheese.

Let everything warm together for 1–2 minutes.

Plate pork chops with peaches and glaze.

Garnish with parsley.

Serve with roasted potatoes, mashed cauliflower, or a fresh green salad.
