BBQ Pineapple Chicken Kabobs
Ingredients:

1 ½ lbs (680 g) boneless, skinless chicken breast or thighs, cut into 1-inch cubes

1 cup fresh pineapple chunks

1 red bell pepper, cut into 1-inch pieces
-
1 green bell pepper, cut into 1-inch pieces
-
1 red onion, cut into wedges
-
¼ cup olive oil
-
½ cup BBQ sauce (your favorite brand or homemade)

2 tbsp honey or brown sugar
-
1 tsp smoked paprika
-
1 tsp garlic powder
-
Salt & black pepper, to taste

Wooden or metal skewers
Instructions:

Marinate the Chicken

In a bowl, whisk together olive oil, BBQ sauce, honey, smoked paprika, garlic powder, salt, and pepper.

Add chicken cubes and toss to coat. Marinate at least 30 minutes, up to 2 hours.

Assemble Kabobs

Thread chicken, pineapple, bell peppers, and onion alternately onto skewers.

Grill the Kabobs

Preheat grill or grill pan to medium-high heat.

Grill kabobs 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.

Baste with extra BBQ sauce during grilling for added flavor.

Serve

Serve hot with rice, quinoa, or a fresh salad.

Optional: sprinkle with chopped cilantro or green onions for garnish.
