BBQ Pineapple Chicken Kabobs

 BBQ Pineapple Chicken Kabobs

Ingredients:

  • 1 ½ lbs (680 g) boneless, skinless chicken breast or thighs, cut into 1-inch cubes

  • 1 cup fresh pineapple chunks

  • 1 red bell pepper, cut into 1-inch pieces

  • 1 green bell pepper, cut into 1-inch pieces

  • 1 red onion, cut into wedges

  • ¼ cup olive oil

  • ½ cup BBQ sauce (your favorite brand or homemade)

  • 2 tbsp honey or brown sugar

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • Salt & black pepper, to taste

  • Wooden or metal skewers


Instructions:

  1. Marinate the Chicken

    • In a bowl, whisk together olive oil, BBQ sauce, honey, smoked paprika, garlic powder, salt, and pepper.

    • Add chicken cubes and toss to coat. Marinate at least 30 minutes, up to 2 hours.

  2. Assemble Kabobs

    • Thread chicken, pineapple, bell peppers, and onion alternately onto skewers.

  3. Grill the Kabobs

    • Preheat grill or grill pan to medium-high heat.

    • Grill kabobs 10–12 minutes, turning occasionally, until chicken is cooked through and has nice grill marks.

    • Baste with extra BBQ sauce during grilling for added flavor.

  4. Serve

    • Serve hot with rice, quinoa, or a fresh salad.

    • Optional: sprinkle with chopped cilantro or green onions for garnish.
