Blackened Salmon with Mango Salsa

Ingredients

For the Salmon:

  • 4 salmon fillets (about 6 oz each)

  • 2 tablespoons olive oil

  • 1 tablespoon paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon cayenne pepper (adjust for heat)

  • 1 teaspoon dried thyme

  • ½ teaspoon black pepper

  • ½ teaspoon salt

  • Lemon wedges, for serving

For the Mango Salsa:

  • 1 ripe mango, diced

  • ½ red bell pepper, diced

  • ¼ red onion, finely chopped

  • 1 small jalapeño, seeded and minced (optional)

  • Juice of 1 lime

  • 2 tablespoons chopped fresh cilantro

  • Salt, to taste


Instructions

  1. Prepare the Mango Salsa
    In a bowl, combine mango, red bell pepper, onion, jalapeño, lime juice, cilantro, and a pinch of salt.
    Mix well and chill in the refrigerator while cooking the salmon.

  2. Season the Salmon
    In a small bowl, mix paprika, garlic powder, onion powder, cayenne, thyme, pepper, and salt.
    Rub each salmon fillet with olive oil, then coat generously with the blackened seasoning on all sides.

  3. Cook the Salmon
    Heat a cast-iron skillet over medium-high heat until hot.
    Sear salmon for 3–4 minutes per side, or until the crust is dark and the fish is cooked through but still tender inside.

  4. Assemble and Serve
    Top each salmon fillet with a generous scoop of fresh mango salsa.
    Serve with lime wedges, rice, quinoa, or grilled vegetables.
