Butter Chicken Bites with Creamy Parmesan Pasta
Ingredients
Chicken:
• 1.5 lb boneless chicken breasts or thighs, cut into bite-size pieces
• Salt and black pepper to taste
• 1 tsp paprika
• 1 tsp garlic powder
• 2 tbsp olive oil
• 4 tbsp butter
• 3 cloves garlic, minced
• 1 tsp Italian seasoning
• 1 tbsp fresh lemon juice
• 2 tbsp freshly chopped parsley (optional)
Parmesan Pasta:
• 10 oz pasta (penne, shells, bowties, whatever calls to you)
• 1 cup heavy cream
• 1 cup freshly grated Parmesan cheese
• 1 cup reserved pasta water
• Salt and black pepper to taste
Instructions

Cook pasta in salted boiling water until al dente. Save 1 cup of the pasta water. Drain and keep nearby like a loyal sidekick.

Season chicken pieces with salt, pepper, paprika, and garlic powder.

Heat olive oil in a large skillet. Sear the chicken on medium-high until golden and cooked through, about 6 to 8 minutes. Remove to a plate for a dramatic exit.

Same skillet, drop in the butter and garlic. Let it bubble and smell incredible. Add Italian seasoning and lemon juice.

Return chicken to the pan and toss until each piece is glossy and living its best life.

For the pasta sauce, pour in heavy cream and stir in Parmesan. Splash in the reserved pasta water until the sauce hits perfect creamy consistency.
