Cajun Shrimp Deviled Eggs

Ingredients

  • 6 large eggs

  • 1/3 cup mayonnaise

  • 1 tsp Dijon mustard

  • 1 tsp Cajun seasoning (plus more for garnish)

  • 1/2 tsp hot sauce (optional, for extra kick)

  • 12 small shrimp (peeled, deveined)

  • 1 tbsp olive oil or butter

  • 1 garlic clove, minced

  • Salt & pepper, to taste

  • Fresh parsley or chives, chopped (for garnish)


Instructions

  1. Boil eggs: Place eggs in a pot, cover with water, and bring to a boil. Simmer 10–12 minutes, then cool in ice water. Peel and slice in half lengthwise.

  2. Make filling: Remove yolks and mash them in a bowl with mayonnaise, Dijon, Cajun seasoning, and hot sauce. Mix until smooth.

  3. Cook shrimp: Heat olive oil or butter in a skillet over medium heat. Add garlic and cook 30 seconds. Add shrimp, season with salt, pepper, and a pinch of Cajun seasoning. Sear 1–2 minutes per side until pink and cooked through.

  4. Assemble: Pipe or spoon yolk mixture into egg whites. Top each with a shrimp.

  5. Finish: Garnish with parsley/chives and a light sprinkle of Cajun seasoning. Serve chilled or at room temperature.
