Caramelized Pear & Blue Cheese Salad

Ingredients

  • 2 large firm pears, cored and cut into wedges

  • 2 tablespoons butter

  • Pinch of salt

  • 1 tablespoon honey

  • 1 red onion, thinly sliced

  • Mixed greens of your choice (arugula, romaine, red leaf lettuce, etc.)

  • Blue cheese, crumbled

  • Optional: candied nuts (walnuts, pecans, hazelnuts) for added crunch

  • Dressing of your choice (vinaigrette, lemon and olive oil, or honey mustard)

Instructions

  1. In a large pan, melt butter over medium heat. Add the pear wedges in a single layer and cook for 3-5 minutes on each side until golden and caramelized.

  2. Reduce heat slightly, add sliced onion, honey, a pinch of salt, and some fresh black pepper. Stir and cook for another 3 minutes until onions soften and caramelize.

  3. Remove from heat and let cool slightly.

  4. Toss the mixed greens with your chosen dressing.

  5. Arrange the greens on a serving plate, top with the warm caramelized pears and onions.

  6. Sprinkle crumbled blue cheese over the salad.

  7. Add candied nuts if using and serve immediately.
