Cheesy Bacon Chicken Potato Bake

Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • 4 cups potatoes, diced (Yukon Gold or Russet)

  • 6 slices bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • ½ cup ranch dressing (or 1 packet ranch seasoning + ½ cup sour cream)

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp onion powder

  • Salt and pepper, to taste

  • 2 green onions, sliced (for garnish)


Instructions

  1. Preheat Oven:
    Preheat to 400°F (200°C). Lightly grease a 9×13-inch baking dish.

  2. Season the Potatoes:
    In a large bowl, toss potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper.
    Spread evenly in the baking dish and bake 25 minutes, stirring halfway through.

  3. Add Chicken and Sauce:
    In the same bowl, toss chicken pieces with ranch dressing (or ranch mix + sour cream).
    Remove potatoes from the oven, add the chicken evenly on top, and return to bake 20 minutes more.

  4. Add Bacon and Cheese:
    Sprinkle cooked bacon, cheddar, and mozzarella over the top.
    Bake another 10 minutes, or until cheese is melted and bubbly.

  5. Serve:
    Garnish with green onions and extra bacon bits. Serve hot with a side salad or steamed veggies.
