Cheesy Bacon Chicken Potato Bake
Ingredients

1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

4 cups potatoes, diced (Yukon Gold or Russet)

6 slices bacon, cooked and crumbled

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese
-
½ cup ranch dressing (or 1 packet ranch seasoning + ½ cup sour cream)

2 tbsp olive oil
-
1 tsp garlic powder
-
1 tsp paprika
-
½ tsp onion powder
-
Salt and pepper, to taste

2 green onions, sliced (for garnish)
Instructions

Preheat Oven:
Preheat to 400°F (200°C). Lightly grease a 9×13-inch baking dish. -
Season the Potatoes:
In a large bowl, toss potatoes with olive oil, garlic powder, paprika, onion powder, salt, and pepper.
Spread evenly in the baking dish and bake 25 minutes, stirring halfway through. -
Add Chicken and Sauce:
In the same bowl, toss chicken pieces with ranch dressing (or ranch mix + sour cream).
Remove potatoes from the oven, add the chicken evenly on top, and return to bake 20 minutes more. -
Add Bacon and Cheese:
Sprinkle cooked bacon, cheddar, and mozzarella over the top.
Bake another 10 minutes, or until cheese is melted and bubbly. -
Serve:
Garnish with green onions and extra bacon bits. Serve hot with a side salad or steamed veggies.
