Cheesy Beef and Mushroom Rice Bake

Ingredients:

1 lb (450g) ground beef

Salt and pepper, to taste

1 tbsp olive oil

1 small onion, diced
-
3 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 cup uncooked long-grain white rice
-
2 cups beef broth
-
1 tsp dried thyme
-
1 tsp paprika
-
1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

Optional garnish: chopped parsley
Instructions:

Preheat oven: Preheat oven to 375°F (190°C).

Cook beef: In a large skillet, heat olive oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Remove excess fat.

Sauté vegetables: Add onion, garlic, and mushrooms to the skillet. Cook 3–4 minutes until softened.

Combine: Stir in uncooked rice, beef broth, thyme, and paprika. Transfer mixture to a greased 9×13-inch baking dish.

Bake: Cover with foil and bake 30 minutes. Remove foil, sprinkle cheddar and Parmesan over the top, and bake an additional 5–10 minutes until cheese is melted and bubbly.

Serve: Garnish with chopped parsley. Serve hot.
