Cheesy Beef and Mushroom Rice Bake

Servings: 4–6 | Prep Time: 10 min | Cook Time: 35–40 min | Calories: ~480 per serving

Ingredients:

  • 1 lb (450g) ground beef

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 8 oz (225g) mushrooms, sliced

  • 1 cup uncooked long-grain white rice

  • 2 cups beef broth

  • 1 tsp dried thyme

  • 1 tsp paprika

  • 1 cup shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • Optional garnish: chopped parsley

Instructions:

  1. Preheat oven: Preheat oven to 375°F (190°C).

  2. Cook beef: In a large skillet, heat olive oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Remove excess fat.

  3. Sauté vegetables: Add onion, garlic, and mushrooms to the skillet. Cook 3–4 minutes until softened.

  4. Combine: Stir in uncooked rice, beef broth, thyme, and paprika. Transfer mixture to a greased 9×13-inch baking dish.

  5. Bake: Cover with foil and bake 30 minutes. Remove foil, sprinkle cheddar and Parmesan over the top, and bake an additional 5–10 minutes until cheese is melted and bubbly.

  6. Serve: Garnish with chopped parsley. Serve hot.
