Cheesy Beef and Spinach Lasagna Skillet

Ingredients

  • 1 lb (450 g) ground beef

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 1 (24 oz / 680 g) jar marinara or pasta sauce

  • 1½ cups ricotta cheese

  • 2 cups baby spinach, chopped

  • 1 tsp Italian seasoning

  • Salt and black pepper, to taste

  • 8 oz (225 g) lasagna noodles, broken into pieces

  • 2 cups beef broth or water

  • 1½ cups shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Optional garnish: fresh basil or parsley


Instructions

  1. Cook the Beef:
    In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.

  2. Add Aromatics:
    Stir in onion and garlic, cooking until soft and fragrant, about 2 minutes.

  3. Build the Sauce:
    Add marinara sauce, beef broth, Italian seasoning, salt, and pepper. Stir well.

  4. Add Noodles:
    Break lasagna noodles into bite-sized pieces and stir them into the sauce.
    Cover and simmer for 15–18 minutes, stirring occasionally, until noodles are tender.

  5. Add Cheese and Spinach:
    Stir in ricotta cheese and chopped spinach until creamy and wilted.

  6. Top and Melt:
    Sprinkle mozzarella and Parmesan over the top. Cover and cook 2–3 more minutes, until the cheese is melted and bubbly.

  7. Serve:
    Garnish with fresh parsley or basil and serve warm.
