Ingredients

1 lb (450 g) ground beef

1 tbsp olive oil

1 small onion, chopped

3 cloves garlic, minced

1 (24 oz / 680 g) jar marinara or pasta sauce

1½ cups ricotta cheese

2 cups baby spinach, chopped

1 tsp Italian seasoning

Salt and black pepper, to taste

8 oz (225 g) lasagna noodles, broken into pieces

2 cups beef broth or water
-
1½ cups shredded mozzarella cheese

¼ cup grated Parmesan cheese

Optional garnish: fresh basil or parsley
Instructions

Cook the Beef:
In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed. -
Add Aromatics:
Stir in onion and garlic, cooking until soft and fragrant, about 2 minutes. -
Build the Sauce:
Add marinara sauce, beef broth, Italian seasoning, salt, and pepper. Stir well. -
Add Noodles:
Break lasagna noodles into bite-sized pieces and stir them into the sauce.
Cover and simmer for 15–18 minutes, stirring occasionally, until noodles are tender. -
Add Cheese and Spinach:
Stir in ricotta cheese and chopped spinach until creamy and wilted. -
Top and Melt:
Sprinkle mozzarella and Parmesan over the top. Cover and cook 2–3 more minutes, until the cheese is melted and bubbly. -
Serve:
Garnish with fresh parsley or basil and serve warm.
