Cheesy Beef & Rice Skillet

Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 cup long-grain white rice (uncooked)

  • 2 cups beef broth

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 1 cup corn (optional)

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp chili powder (optional)

  • Salt & pepper to taste

  • 1 ½ cups shredded cheddar cheese

  • ½ cup shredded mozzarella (optional for extra melt)

  • Fresh parsley or green onions for garnish


Instructions

  1. Brown the beef:
    Heat olive oil in a large skillet. Add ground beef and onion. Cook until browned. Stir in garlic.

  2. Add rice + seasonings:
    Stir in uncooked rice, paprika, garlic powder, onion powder, chili powder, salt, and pepper.

  3. Add liquids:
    Pour in beef broth and the can of cream soup. Mix well.

  4. Simmer:
    Cover and cook on medium-low for 15–18 minutes, stirring occasionally, until rice is tender.

  5. Make it cheesy:
    Stir in cheddar and mozzarella until melted and creamy.

  6. Serve:
    Garnish with parsley or green onions. Serve hot.
