Ingredients

1 lb ground beef

1 small onion, diced
-
2 cloves garlic, minced

1 tbsp olive oil
-
1 cup long-grain white rice (uncooked)

2 cups beef broth
-
1 can (10.5 oz) cream of mushroom or cream of chicken soup

1 cup corn (optional)
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp chili powder (optional)

Salt & pepper to taste

1 ½ cups shredded cheddar cheese
-
½ cup shredded mozzarella (optional for extra melt)

Fresh parsley or green onions for garnish
Instructions

Brown the beef:
Heat olive oil in a large skillet. Add ground beef and onion. Cook until browned. Stir in garlic. -
Add rice + seasonings:
Stir in uncooked rice, paprika, garlic powder, onion powder, chili powder, salt, and pepper. -
Add liquids:
Pour in beef broth and the can of cream soup. Mix well. -
Simmer:
Cover and cook on medium-low for 15–18 minutes, stirring occasionally, until rice is tender. -
Make it cheesy:
Stir in cheddar and mozzarella until melted and creamy. -
Serve:
Garnish with parsley or green onions. Serve hot.
