Cheesy Buffalo Chicken Rice Skillet

Servings: 4 | Prep Time: 10 min | Cook Time: 20 min | Calories: ~450 per serving

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • ½ cup buffalo sauce (adjust to taste)

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • ½ cup diced green onions

  • 1 tsp garlic powder

  • Optional garnish: extra buffalo sauce, parsley

Instructions:

  1. Cook chicken: Season chicken with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Cook chicken 5–6 minutes until golden and cooked through. Remove from skillet and set aside.

  2. Cook rice: In the same skillet, add rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer 15 minutes until rice is tender.

  3. Combine: Stir cooked chicken back into the skillet with buffalo sauce. Mix in cheddar and mozzarella cheeses until melted and creamy.

  4. Serve: Top with diced green onions and drizzle extra buffalo sauce if desired. Serve hot.
