Cheesy Buffalo Chicken Rice Skillet

Ingredients:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

2 tbsp olive oil

1 cup long-grain white rice

2 cups chicken broth
-
½ cup buffalo sauce (adjust to taste)

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

½ cup diced green onions
-
1 tsp garlic powder
-
Optional garnish: extra buffalo sauce, parsley
Instructions:

Cook chicken: Season chicken with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Cook chicken 5–6 minutes until golden and cooked through. Remove from skillet and set aside.

Cook rice: In the same skillet, add rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer 15 minutes until rice is tender.

Combine: Stir cooked chicken back into the skillet with buffalo sauce. Mix in cheddar and mozzarella cheeses until melted and creamy.

Serve: Top with diced green onions and drizzle extra buffalo sauce if desired. Serve hot.
