Cheesy Cajun Chicken Alfredo Skillet

Ingredients

  • 2 tbsp olive oil

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 tsp Cajun seasoning (plus extra to taste)

  • ½ tsp salt

  • ½ tsp black pepper

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • 1 tsp paprika

  • 8 oz fettuccine or penne pasta, cooked al dente

  • 1 cup shredded mozzarella cheese

  • 2 tbsp chopped parsley (for garnish)


Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken until cooked through and lightly browned, about 5–6 minutes. Remove and set aside.

  3. In the same skillet, add garlic and sauté 1 minute until fragrant.

  4. Pour in heavy cream and chicken broth, stirring to combine.

  5. Add Parmesan, Italian seasoning, paprika, and extra Cajun seasoning. Simmer 3–4 minutes until sauce thickens slightly.

  6. Return chicken to the skillet. Add cooked pasta and toss to coat in the creamy sauce.

  7. Sprinkle mozzarella over the top and cover for 2–3 minutes until melted.

  8. Garnish with parsley and serve immediately.
