Cheesy Chicken Broccoli Rice Casserole

Ingredients:

  • 2 cups cooked chicken breast, shredded or cubed

  • 2 cups cooked rice (white or jasmine)

  • 2 cups fresh or frozen broccoli florets

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup sour cream

  • 1 cup milk

  • 2 cups shredded cheddar cheese (divided)

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt and black pepper, to taste

  • 1 tbsp butter (for greasing the dish)

Instructions:

  1. Preheat Oven:

    • Preheat to 375°F (190°C) and lightly grease a 9×13-inch baking dish with butter.

  2. Prepare the Broccoli:

    • Steam or blanch broccoli until just tender (about 3–4 minutes). Drain and set aside.

  3. Mix Everything Together:

    • In a large bowl, combine cooked rice, chicken, broccoli, cream of chicken soup, sour cream, milk, 1½ cups cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until creamy and well blended.

  4. Assemble:

    • Spread the mixture evenly into the prepared casserole dish.

    • Sprinkle the remaining ½ cup of cheddar cheese on top.

  5. Bake:

    • Bake uncovered for 25–30 minutes, or until hot and bubbly with melted golden cheese on top.

  6. Serve:

    • Let rest for 5 minutes before serving.
