2 cups cooked shredded chicken

1 red bell pepper, sliced

8 oz (225 g) cream cheese, softened

1/2 cup sour cream

1/2 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1 cup cooked rice (optional for extra heartiness)

1/2 cup shredded cheese for topping

Fresh cilantro, chopped (for garnish)
Instructions

Preheat oven:
Set oven to 375°F (190°C) and grease a 9×13-inch baking dish. -
Cook the veggies:
In a skillet, heat olive oil over medium heat. Add sliced peppers and onions, season with chili powder, cumin, paprika, salt, and pepper. Sauté 5–6 minutes until tender. -
Make the creamy filling:
In a large bowl, mix cream cheese, sour cream, shredded cheddar, and Monterey Jack until smooth. Stir in cooked chicken, sautéed veggies, and rice if using. -
Assemble the casserole:
Spread mixture into the prepared baking dish. Top with remaining shredded cheese. -
Bake:
Bake uncovered for 20–25 minutes until hot, bubbly, and cheese is melted. -
Serve:
Garnish with chopped cilantro and serve warm. Perfect with tortillas or a side salad.
