Cheesy Chicken Fajita Skillet

Ingredients

For the Chicken

  • 2 lbs chicken breasts, sliced into thin strips

  • 1 tbsp olive oil

  • 1 tbsp fajita seasoning

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp chili powder

  • Salt & pepper to taste

Veggies

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

Cheesy Sauce

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup shredded cheddar

  • 1 cup shredded Monterey Jack

  • 1 tsp lime juice

  • Fresh cilantro, chopped (for garnish)


Instructions

1. Cook the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add sliced chicken, fajita seasoning, garlic powder, onion powder, chili powder, paprika, salt, and pepper.

  3. Cook until chicken is browned and fully cooked, 6–8 minutes.

  4. Remove chicken and set aside.


2. Cook the Veggies

  1. In the same skillet, add peppers and onions.

  2. Sauté for 5–6 minutes until softened and slightly charred.


3. Make the Cheesy Sauce

  1. Add butter and minced garlic to the veggies and cook 1 minute.

  2. Pour in heavy cream and stir.

  3. Add cheddar and Monterey Jack cheese.

  4. Stir until melted, smooth, and creamy.

  5. Add lime juice.


4. Combine

  1. Add cooked chicken back into the skillet.

  2. Toss everything together in the cheesy fajita sauce.


5. Serve

Garnish with fresh cilantro.
Serve with rice, tortillas, or enjoy it as a low-carb skillet meal.
