Cheesy Ground Beef and Potato Casserole

Ingredients:

  • 1½ lbs ground beef

  • 6 medium potatoes, thinly sliced

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup

  • 1 cup sour cream

  • 1½ cups shredded cheddar cheese (divided)

  • 1 tsp paprika

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp olive oil

  • 2 tbsp chopped parsley (for garnish)

Instructions:

  1. Preheat Oven:

    • Preheat to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. Cook Ground Beef:

    • In a large skillet, heat olive oil over medium heat.

    • Add diced onion and garlic; sauté until fragrant.

    • Add ground beef, season with salt, pepper, and paprika, and cook until browned. Drain excess grease.

  3. Prepare Sauce:

    • In a bowl, mix cream of mushroom soup and sour cream.

    • Stir in half of the shredded cheese.

  4. Assemble Casserole:

    • Layer half of the sliced potatoes on the bottom of the dish.

    • Spread half of the beef mixture, then half of the sauce.

    • Repeat the layers, ending with the sauce on top.

  5. Bake:

    • Cover with foil and bake for 45 minutes.

    • Remove foil, top with remaining cheese, and bake an additional 15–20 minutes, until potatoes are tender and cheese is golden and bubbly.

  6. Serve:

    • Let cool slightly and garnish with chopped parsley.
