Cheesy Ground Beef Enchilada Skillet

Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1 tsp cumin

  • Salt and pepper, to taste

  • 1 can (10 oz) red enchilada sauce

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup corn (fresh, frozen, or canned)

  • 1 1/2 cups shredded cheddar cheese

  • 1/2 cup shredded Monterey Jack cheese

  • Fresh cilantro, chopped (for garnish)

  • Optional toppings: sour cream, sliced jalapeños, diced tomatoes


Instructions:

  1. In a large skillet over medium heat, cook ground beef with onion, garlic, chili powder, cumin, salt, and pepper until beef is browned and cooked through. Drain excess fat.

  2. Stir in enchilada sauce, black beans, and corn. Simmer 5 minutes until heated through.

  3. Sprinkle shredded cheddar and Monterey Jack cheese over the top. Cover and cook 2-3 minutes until cheese is melted.

  4. Garnish with fresh cilantro and optional toppings. Serve hot.
