Cheesy Loaded Lasagna Soup

Ingredients

1 lb ground beef
-
½ lb Italian sausage (optional but extra flavor)

1 small onion, diced

4 cloves garlic, minced

1 tbsp olive oil
-
4 cups beef or chicken broth
-
1 jar (24 oz) marinara sauce
-
1 can (15 oz) crushed tomatoes
-
1 tbsp Italian seasoning
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp crushed red pepper (optional)

Salt & pepper to taste

10–12 lasagna noodles, broken into pieces

1 cup heavy cream
-
1 cup ricotta cheese
-
2 cups shredded mozzarella
-
½ cup grated Parmesan
-
Fresh basil or parsley for garnish
Instructions

Brown the meat:
Heat olive oil in a large pot. Cook ground beef, sausage, and onion until browned. Stir in garlic. -
Build the soup:
Add broth, marinara, crushed tomatoes, Italian seasoning, garlic powder, onion powder, red pepper, salt, and pepper. Stir well. -
Add noodles:
Bring to a boil. Add broken lasagna noodles and cook until tender (10–12 minutes), stirring occasionally. -
Make it creamy:
Reduce heat and stir in heavy cream. -
Add the cheesy topping:
In a small bowl, mix ricotta, mozzarella, and Parmesan.
Scoop a big dollop on top of each serving OR stir it directly into the soup for extra cheesiness. -
Serve:
Garnish with fresh basil or parsley and extra Parmesan.
