Cheesy Loaded Lasagna Soup

Ingredients

  • 1 lb ground beef

  • ½ lb Italian sausage (optional but extra flavor)

  • 1 small onion, diced

  • 4 cloves garlic, minced

  • 1 tbsp olive oil

  • 4 cups beef or chicken broth

  • 1 jar (24 oz) marinara sauce

  • 1 can (15 oz) crushed tomatoes

  • 1 tbsp Italian seasoning

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp crushed red pepper (optional)

  • Salt & pepper to taste

  • 10–12 lasagna noodles, broken into pieces

  • 1 cup heavy cream

  • 1 cup ricotta cheese

  • 2 cups shredded mozzarella

  • ½ cup grated Parmesan

  • Fresh basil or parsley for garnish


Instructions

  1. Brown the meat:
    Heat olive oil in a large pot. Cook ground beef, sausage, and onion until browned. Stir in garlic.

  2. Build the soup:
    Add broth, marinara, crushed tomatoes, Italian seasoning, garlic powder, onion powder, red pepper, salt, and pepper. Stir well.

  3. Add noodles:
    Bring to a boil. Add broken lasagna noodles and cook until tender (10–12 minutes), stirring occasionally.

  4. Make it creamy:
    Reduce heat and stir in heavy cream.

  5. Add the cheesy topping:
    In a small bowl, mix ricotta, mozzarella, and Parmesan.
    Scoop a big dollop on top of each serving OR stir it directly into the soup for extra cheesiness.

  6. Serve:
    Garnish with fresh basil or parsley and extra Parmesan.
