Cheesy Ranch Chicken and Potato Casserole

Ingredients:

  • 3 cups cooked chicken, shredded or diced

  • 4 cups diced potatoes (parboiled or roasted)

  • 1 cup shredded cheddar cheese

  • ½ cup shredded mozzarella cheese

  • 1 packet ranch seasoning mix (about 1 oz)

  • 1 cup sour cream

  • ½ cup mayonnaise

  • ½ cup milk

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • Salt and black pepper, to taste

  • 2 tbsp butter, melted (for topping)

  • ½ cup crushed Ritz crackers or breadcrumbs (optional, for topping)

  • 2 green onions, sliced (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix sour cream, mayonnaise, milk, ranch seasoning, garlic, onion, salt, and pepper until smooth.

  3. Add chicken, potatoes, and half of the cheeses to the mixture, stirring until well combined.

  4. Transfer to a greased baking dish. Sprinkle the remaining cheese on top.

  5. (Optional) Mix melted butter with crushed crackers or breadcrumbs and sprinkle over the casserole for a crispy topping.

  6. Bake for 25–30 minutes, until bubbly and golden on top.

  7. Garnish with sliced green onions before serving.
