Cheesy Ranch Oven Roasted Potatoes
Ingredients
For the Potatoes:

2-3 pounds baby red potatoes (or russet potatoes), cut into 1-inch pieces

2-3 tablespoons olive oil

2-3 tablespoons ranch seasoning mix

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste
For the Cheese Topping:

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 tablespoons fresh chives or green onions, chopped (for garnish)
Instructions

Preheat oven: Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or spray with cooking spray.

Prepare potatoes: Wash and cut potatoes into evenly sized 1-inch pieces. If using baby red potatoes, simply cut them in half.

Season potatoes: In a large bowl, toss potatoes with olive oil, ranch seasoning mix, garlic powder, and onion powder until evenly coated. Season with salt and pepper to taste.

Arrange on baking sheet: Spread seasoned potatoes in a single, even layer on the prepared baking sheet, making sure they’re not touching for even roasting.

Roast potatoes: Bake for 25-30 minutes, stirring halfway through, until potatoes are golden brown, crispy on the outside, and tender when pierced with a fork.

Add cheese: Remove from oven and sprinkle shredded cheddar and Parmesan cheese evenly over the hot potatoes.

Melt cheese: Return to oven for 2-5 minutes until cheese is melted and bubbly.

Garnish and serve: Remove from oven and immediately garnish with chopped chives or green onions. Serve hot while cheese is still melted.
