1 lb (450 g) ground beef

1 small onion, diced

1 packet taco seasoning (or homemade mix)

1 cup salsa

1 (10 oz) can diced tomatoes with green chilies (Rotel-style)

1 cup sour cream

2 cups shredded cheddar cheese (divided)

1 cup shredded Monterey Jack cheese

Salt and pepper, to taste

Instructions:

Cook the Pasta:
Boil pasta in salted water until al dente. Drain and set aside. -
Cook the Beef:
In a large skillet, cook ground beef and diced onion over medium-high heat until browned. Drain excess fat. -
Season It:
Add taco seasoning, salsa, and diced tomatoes with green chilies. Stir and let simmer for 3–4 minutes. -
Add Creaminess:
Lower the heat, then stir in sour cream and 1 cup of shredded cheddar cheese until melted and creamy. -
Combine:
Add cooked pasta to the beef mixture and stir to coat evenly. -
Bake It:
Pour everything into a greased 9×13-inch baking dish. Top with remaining cheddar and Monterey Jack cheese. -
Bake:
Bake at 375°F (190°C) for 15–20 minutes, or until cheese is melted and bubbly. -
Serve:
