1/2 cup chia seeds

2 cups unsweetened coconut milk (or milk of choice)

2 tablespoons honey or maple syrup

1/2 teaspoon vanilla extract

For the Parfait Layers:

1 ripe mango, peeled and diced

1/4 cup shredded coconut (unsweetened)

Optional: granola, fresh berries, or mint for garnish


Instructions

1. Make the Chia Pudding

  • In a bowl, whisk together chia seeds, coconut milk, honey, and vanilla.

  • Let sit for 5 minutes, whisking again to prevent clumps.

  • Cover and refrigerate for 2–4 hours or overnight until thickened.

2. Prepare the Mango

  • Peel and dice the mango into small cubes.

3. Assemble the Parfaits

  • In clear cups or jars, layer chia pudding, diced mango, and shredded coconut.

  • Repeat layers until cups are filled, finishing with mango and coconut on top.

4. Serve

  • Optional: Top with granola, fresh berries, or mint for extra flavor and texture.

  • Serve chilled.

Notes

Chia pudding consistency: Adjust coconut milk for thicker or thinner pudding.

Sweetness level: Increase honey or maple syrup if desired.

Fruit variations: Substitute mango with pineapple, kiwi, or berries.
