Ingredients

2 cups unsweetened coconut milk (or milk of choice)
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
For the Parfait Layers:
1 ripe mango, peeled and diced
1/4 cup shredded coconut (unsweetened)
Optional: granola, fresh berries, or mint for garnish
Instructions
1. Make the Chia Pudding

In a bowl, whisk together chia seeds, coconut milk, honey, and vanilla.

Let sit for 5 minutes, whisking again to prevent clumps.

Cover and refrigerate for 2–4 hours or overnight until thickened.
2. Prepare the Mango

Peel and dice the mango into small cubes.
3. Assemble the Parfaits

In clear cups or jars, layer chia pudding, diced mango, and shredded coconut.

Repeat layers until cups are filled, finishing with mango and coconut on top.
4. Serve
