Chicken and Broccoli Stir-Fry

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast, thinly sliced

  • 2 tablespoons vegetable oil, divided

  • 3 cups broccoli florets

  • 1 small carrot, thinly sliced (optional, for color)

  • 2 garlic cloves, minced

  • 1 teaspoon fresh ginger, minced (optional)

For the Sauce:

  • ¼ cup soy sauce

  • 2 tablespoons oyster sauce (or hoisin for sweeter flavor)

  • 1 tablespoon cornstarch

  • 1 tablespoon water

  • 1 tablespoon brown sugar or honey

  • ½ teaspoon sesame oil (optional)

For Garnish:

  • Sesame seeds

  • Sliced green onions


Instructions

1. Prep the Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, water, brown sugar, and sesame oil.

  2. Set aside.


2. Cook the Chicken

  1. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.

  2. Add the chicken slices and cook for 4–5 minutes until golden and cooked through.

  3. Remove chicken from the pan and set aside.


3. Cook the Vegetables

  1. Add the remaining 1 tablespoon oil to the skillet.

  2. Sauté garlic and ginger for 30 seconds until fragrant.

  3. Add broccoli and carrot slices and stir-fry for 3–4 minutes until bright and crisp-tender.


4. Combine and Sauce

  1. Return the chicken to the pan.

  2. Pour in the sauce and stir well to coat.

  3. Cook 1–2 minutes until the sauce thickens and everything is evenly coated.


5. Serve

  • Serve hot over steamed rice or noodles.

  • Garnish with sesame seeds and sliced green onions.
