Chicken and Potato Bake
Ingredients

1½ lbs boneless skinless chicken thighs or breasts, cut into bite-sized pieces

4 medium potatoes, diced into ¾-inch cubes

1 tablespoon minced garlic

3 tablespoons olive oil, divided

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika
-
1 teaspoon dried oregano
-
½ teaspoon dried thyme
-
½ teaspoon rosemary

1 cup shredded mozzarella cheese

¼ cup lemon juice
-
Fresh parsley for garnish
Instructions

Preheat oven to 425°F (220°C)

Wash and dice potatoes into approximately ¾-inch cubes

In a large bowl, combine diced potatoes with 2 tablespoons olive oil, minced garlic, salt, pepper, paprika, oregano, thyme, and rosemary. Toss to coat evenly

Spray a 9×13-inch baking dish with non-stick spray and spread the seasoned potato mixture evenly in the dish

Bake potatoes for 15 minutes

Meanwhile, season chicken pieces with salt and pepper

Remove baking dish from oven and nestle chicken pieces into the potato mixture, pressing them down slightly

Drizzle remaining olive oil and lemon juice over the chicken

Bake for 20-25 minutes until chicken is cooked through and potatoes are golden brown and tender

Sprinkle mozzarella cheese over the top and return to oven for 2-3 minutes until cheese melts

Garnish with fresh chopped parsley before serving
