Chicken Bacon Ranch Stuffed Potatoes

Ingredients

4 large russet potatoes

2 cups cooked chicken breast, shredded

6 slices bacon, cooked and crumbled

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup ranch dressing

2 tbsp butter, melted

2 green onions, sliced

Salt and black pepper, to taste
Instructions

Bake the potatoes:
Preheat oven to 400°F (200°C). Scrub and dry the potatoes, then prick them a few times with a fork.
Bake directly on the oven rack for 50–60 minutes, or until tender when pierced with a knife. -
Prepare the filling:
Let potatoes cool slightly, then slice them in half lengthwise and scoop out most of the insides into a bowl, leaving a thin shell. -
Mix the filling:
In the bowl with the scooped-out potato, add shredded chicken, crumbled bacon (reserve some for topping), cheddar cheese, sour cream, ranch dressing, melted butter, salt, and pepper.
Mash and mix until creamy and well combined. -
Stuff and bake:
Spoon the filling back into each potato shell. Top with remaining cheese and bacon.
Return to the oven and bake for 10–15 minutes until hot and bubbly. -
Finish and serve:
Sprinkle with chopped green onions and drizzle with a little extra ranch if desired. Serve warm!
