Chicken Bacon Ranch Stuffed Potatoes

Ingredients

  • 4 large russet potatoes

  • 2 cups cooked chicken breast, shredded

  • 6 slices bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • 1/4 cup ranch dressing

  • 2 tbsp butter, melted

  • 2 green onions, sliced

  • Salt and black pepper, to taste


Instructions

  1. Bake the potatoes:
    Preheat oven to 400°F (200°C). Scrub and dry the potatoes, then prick them a few times with a fork.
    Bake directly on the oven rack for 50–60 minutes, or until tender when pierced with a knife.

  2. Prepare the filling:
    Let potatoes cool slightly, then slice them in half lengthwise and scoop out most of the insides into a bowl, leaving a thin shell.

  3. Mix the filling:
    In the bowl with the scooped-out potato, add shredded chicken, crumbled bacon (reserve some for topping), cheddar cheese, sour cream, ranch dressing, melted butter, salt, and pepper.
    Mash and mix until creamy and well combined.

  4. Stuff and bake:
    Spoon the filling back into each potato shell. Top with remaining cheese and bacon.
    Return to the oven and bake for 10–15 minutes until hot and bubbly.

  5. Finish and serve:
    Sprinkle with chopped green onions and drizzle with a little extra ranch if desired. Serve warm!
