Chicken Kofta Kebabs
Ingredients:

1 lb (450g) ground chicken

1 small onion, finely grated or minced

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped
-
2 tablespoons fresh cilantro, chopped
-
1 teaspoon ground cumin
-
1 teaspoon ground coriander
-
½ teaspoon paprika
-
¼ teaspoon ground cinnamon (optional, adds warmth)

½ teaspoon salt
-
¼ teaspoon black pepper
-
1 tablespoon olive oil (for brushing)

Skewers (wooden or metal; soak wooden skewers 30 minutes if using)
Optional Dipping Sauce:

Yogurt with a squeeze of lemon, garlic, and chopped mint or cilantro
Instructions:

Prepare the Mixture

In a large bowl, combine ground chicken, onion, garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, salt, and pepper.

Mix gently until well combined, being careful not to overwork the meat.

Form the Kebabs

Divide the mixture into 6–8 portions.

Mold each portion around a skewer into a long oval or sausage shape, pressing firmly to adhere.

Cook the Kebabs

Grill: Preheat grill to medium-high. Brush kebabs with olive oil. Grill 4–5 minutes per side until fully cooked and lightly charred.

Oven/Broiler: Preheat oven to 400°F (200°C). Place kebabs on a foil-lined baking sheet, brush with olive oil, and bake 15–20 minutes, turning halfway, until cooked through.

Air Fryer: Cook at 375°F (190°C) for 12–15 minutes, turning halfway.

Serve hot with warm pita, rice, or salad.

Drizzle with yogurt sauce or tahini if desired.
