Chicken Kofta Kebabs

Ingredients:

  • 1 lb (450g) ground chicken

  • 1 small onion, finely grated or minced

  • 2 cloves garlic, minced

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh cilantro, chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • ½ teaspoon paprika

  • ¼ teaspoon ground cinnamon (optional, adds warmth)

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon olive oil (for brushing)

  • Skewers (wooden or metal; soak wooden skewers 30 minutes if using)

Optional Dipping Sauce:

  • Yogurt with a squeeze of lemon, garlic, and chopped mint or cilantro


Instructions:

  1. Prepare the Mixture

    • In a large bowl, combine ground chicken, onion, garlic, parsley, cilantro, cumin, coriander, paprika, cinnamon, salt, and pepper.

    • Mix gently until well combined, being careful not to overwork the meat.

  2. Form the Kebabs

    • Divide the mixture into 6–8 portions.

    • Mold each portion around a skewer into a long oval or sausage shape, pressing firmly to adhere.

  3. Cook the Kebabs

    • Grill: Preheat grill to medium-high. Brush kebabs with olive oil. Grill 4–5 minutes per side until fully cooked and lightly charred.

    • Oven/Broiler: Preheat oven to 400°F (200°C). Place kebabs on a foil-lined baking sheet, brush with olive oil, and bake 15–20 minutes, turning halfway, until cooked through.

    • Air Fryer: Cook at 375°F (190°C) for 12–15 minutes, turning halfway.

  4. Serve

    • Serve hot with warm pita, rice, or salad.

    • Drizzle with yogurt sauce or tahini if desired.
