Chicken, Sweet Potato & Butternut Squash

Prep Time: 15 minutes

Cook Time: 40–45 minutes

Total Time: ~1 hour

Servings: 6

Ingredients

  • 2 lbs chicken breasts or thighs, cut into large chunks

  • 2 cups sweet potato, peeled & cubed

  • 2 cups butternut squash, cubed

  • 1 medium onion, sliced

  • 3 cloves garlic, minced

  • 1 red bell pepper, chopped (optional)

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • ½ tsp cinnamon (optional but delicious with squash)

  • Salt & pepper, to taste

  • 1 cup chicken broth

  • 2 tbsp maple syrup or honey (optional for sweetness)

  • Fresh parsley, for garnish


Instructions (Oven Version)

1. Preheat Oven

Set oven to 400°F (200°C).

2. Prepare the Chicken

Season chicken with salt, pepper, smoked paprika, thyme, and rosemary.

3. Toss the Veggies

In a large bowl, combine sweet potato, butternut squash, onion, garlic, and red pepper.
Drizzle with olive oil, sprinkle salt & pepper, and toss.

4. Layer Everything

Place seasoned chicken in a baking dish.
Spread the sweet potato & squash mixture on top.
Pour chicken broth around the sides (not directly on top of the seasoning).
Drizzle maple syrup or honey if using.

5. Bake

Cover with foil and bake 30 minutes.
Remove foil and bake 10–15 more minutes until chicken is cooked and vegetables are tender.

6. Serve

Garnish with chopped parsley and serve warm.
