🍗 Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce
Ingredients (Serves 4)

4 boneless, skinless chicken breasts (or thighs)

2 tbsp olive oil

2 tbsp butter

8 oz mushrooms, sliced

3 cups fresh spinach

4 garlic cloves, minced
-
1 small onion, finely diced (optional)

1 cup chicken broth
-
1 cup heavy cream
-
¾ cup grated Parmesan cheese

1 tsp Italian seasoning
-
½ tsp red pepper flakes (optional, for heat)

Salt & black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions
1. Cook the Chicken

Season chicken breasts with salt, pepper, and a pinch of Italian seasoning.

Heat olive oil in a large skillet over medium-high heat.

Sear chicken 5–6 minutes per side until golden brown and cooked through (165°F internal temp). Remove and set aside.
2. Sauté the Veggies

In the same skillet, melt butter. Add mushrooms and cook until golden, about 5 minutes.

Stir in onion (if using) and garlic; cook 1–2 minutes until fragrant.

Add spinach and cook until just wilted.
3. Make the Creamy Parmesan Sauce

Pour in chicken broth and stir, scraping up browned bits from the pan.

Add heavy cream and bring to a gentle simmer.

Stir in Parmesan cheese until melted and sauce thickens slightly.

Season with Italian seasoning, red pepper flakes, salt, and pepper.
4. Combine

Return chicken to skillet, spoon sauce over the top, and let simmer for 3–4 minutes so flavors meld.
