Chicken Wontons in Spicy Chili Sauce
Ingredients
For the wontons:

1 lb ground chicken

2 green onions, finely chopped

2 cloves garlic, minced

1 tbsp fresh ginger, grated

2 tbsp soy sauce

1 tbsp sesame oil
-
1 tsp rice vinegar
-
½ tsp white pepper
-
30–40 wonton wrappers
For the chili sauce:

3 tbsp soy sauce
-
2 tbsp Chinese black vinegar (or rice vinegar + splash of balsamic)
-
2 tbsp chili oil with crisp (Lao Gan Ma style, or homemade)
-
1 tbsp sesame oil
-
1 tsp sugar
-
1 garlic clove, finely minced
-
½ tsp crushed red pepper (optional, for extra heat)
Garnish:
-
Chopped scallions
-
Toasted sesame seeds
-
Fresh cilantro
Instructions

Make the filling: In a bowl, combine ground chicken, green onions, garlic, ginger, soy sauce, sesame oil, rice vinegar, and white pepper. Mix until well blended.

Assemble wontons: Place about 1 tsp filling in the center of each wonton wrapper. Moisten edges with water, fold into a triangle, then pinch corners together (or use your preferred fold). Cover with a damp towel while working to prevent drying.

Prepare the chili sauce: In a small bowl, whisk together soy sauce, black vinegar, chili oil, sesame oil, sugar, garlic, and crushed red pepper. Set aside.

Cook wontons: Bring a pot of water to boil. Add wontons in batches and cook for 3–4 minutes, or until they float and chicken is fully cooked. Remove with a slotted spoon.

Serve: Place wontons in bowls, drizzle generously with spicy chili sauce, and garnish with scallions, sesame seeds, and cilantro.
