Ingredients
For the Steak Bites:

2 pounds steak (flank, ribeye, sirloin, or sirloin), cut into 1-inch cubes

1 teaspoon fine sea salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon smoked paprika

2 tablespoons olive oil
For the Chimichurri Sauce:

2/3 cup fresh parsley, chopped (flat leaf preferred)

4 cloves garlic, minced
-
1 shallot, chopped
-
1 teaspoon dried oregano
-
1 small red chili or 2 teaspoons crushed red pepper flakes

3 tablespoons red wine vinegar

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

2/3 cup good-quality extra virgin olive oil
Instructions

Prepare the Chimichurri Sauce:
Combine parsley, garlic, shallot, oregano, chili, vinegar, salt, and pepper in a food processor and pulse until finely chopped but not pureed. Transfer to a bowl and stir in olive oil. Let it sit for at least 15 minutes to meld flavors. -
Season the Steak:
Pat steak cubes dry and season evenly with salt, pepper, and smoked paprika. -
Cook the Steak Bites:
Heat olive oil in a large skillet over medium-high heat. When hot, add steak in a single layer without crowding the pan (cook in batches if needed). Let cook undisturbed for 1-2 minutes until golden on the bottom, then flip and cook an additional 2-3 minutes until desired doneness. -
Combine and Serve:
Remove skillet from heat, drizzle steak bites with about half the chimichurri sauce, and toss gently to coat. Serve warm with extra chimichurri spooned on top.
