Chimichurri Steak Bites

Ingredients

For the Steak Bites:

  • 2 pounds steak (flank, ribeye, sirloin, or sirloin), cut into 1-inch cubes

  • 1 teaspoon fine sea salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/2 teaspoon smoked paprika

  • 2 tablespoons olive oil

For the Chimichurri Sauce:

  • 2/3 cup fresh parsley, chopped (flat leaf preferred)

  • 4 cloves garlic, minced

  • 1 shallot, chopped

  • 1 teaspoon dried oregano

  • 1 small red chili or 2 teaspoons crushed red pepper flakes

  • 3 tablespoons red wine vinegar

  • 1 teaspoon salt

  • 1/2 teaspoon freshly ground black pepper

  • 2/3 cup good-quality extra virgin olive oil

Instructions

  1. Prepare the Chimichurri Sauce:
    Combine parsley, garlic, shallot, oregano, chili, vinegar, salt, and pepper in a food processor and pulse until finely chopped but not pureed. Transfer to a bowl and stir in olive oil. Let it sit for at least 15 minutes to meld flavors.

  2. Season the Steak:
    Pat steak cubes dry and season evenly with salt, pepper, and smoked paprika.

  3. Cook the Steak Bites:
    Heat olive oil in a large skillet over medium-high heat. When hot, add steak in a single layer without crowding the pan (cook in batches if needed). Let cook undisturbed for 1-2 minutes until golden on the bottom, then flip and cook an additional 2-3 minutes until desired doneness.

  4. Combine and Serve:
    Remove skillet from heat, drizzle steak bites with about half the chimichurri sauce, and toss gently to coat. Serve warm with extra chimichurri spooned on top.
