Crab-Stuffed Cheddar Bay Biscuits with Lemon Butter Sauce
Ingredients
For the Biscuits:

1 package Cheddar Bay Biscuit Mix

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Water (as required by biscuit mix package)
For the Crab Filling:

1 pound lump crab meat (fully cooked)

½ teaspoon paprika

½ teaspoon onion powder
-
1 tablespoon Dijon mustard

½ cup mayonnaise
-
¼ cup crushed Ritz crackers (or similar)

1 cup grated Parmesan cheese

Salt and pepper to taste
For the Lemon Butter Sauce:

2 tablespoons melted butter

1 teaspoon lemon juice
Instructions

Preheat oven to 375°F and spray a 12-cup muffin tin with nonstick spray.

Prepare biscuit dough: Mix the cheddar bay biscuit mix according to package instructions, adding the garlic powder and Italian seasoning. Set aside.

Make crab filling: Gently mix the lump crab meat, paprika, onion powder, Dijon mustard, mayonnaise, crushed crackers, Parmesan cheese, salt, and pepper in a bowl.

Assemble biscuits: Press about 1 tablespoon of biscuit dough into each muffin cup, forming a cup shape. Fill each cup with a generous scoop of crab filling. Top with a little more biscuit dough to enclose the filling.

Bake: Bake for 12-15 minutes, until biscuits are golden and cooked through.

Make lemon butter sauce: While baking, mix melted butter and lemon juice in a small bowl.

Finish: Brush the warm biscuits generously with lemon butter sauce after baking.
