Cranberry Orange Muffins
Ingredients

2 cups all-purpose flour

1 cup sugar

1 tbsp baking powder

½ tsp salt

1 tsp orange zest
-
½ cup unsalted butter, melted

1 cup milk
-
2 large eggs
-
1 tsp vanilla extract
-
1½ cups fresh or frozen cranberries

Optional: coarse sugar for topping
Instructions

Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.

In a large bowl, whisk flour, sugar, baking powder, salt, and orange zest.

In another bowl, whisk melted butter, milk, eggs, and vanilla.

Pour wet ingredients into dry ingredients; stir until just combined.

Fold in cranberries. Be careful not to overmix.

Divide batter evenly into muffin cups. Sprinkle with coarse sugar if desired.

Bake 20–25 minutes, until a toothpick comes out clean.

Cool slightly before serving.
