Cranberry Orange Muffins

Ingredients

  • 2 cups all-purpose flour

  • 1 cup sugar

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 tsp orange zest

  • ½ cup unsalted butter, melted

  • 1 cup milk

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1½ cups fresh or frozen cranberries

  • Optional: coarse sugar for topping

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.

  2. In a large bowl, whisk flour, sugar, baking powder, salt, and orange zest.

  3. In another bowl, whisk melted butter, milk, eggs, and vanilla.

  4. Pour wet ingredients into dry ingredients; stir until just combined.

  5. Fold in cranberries. Be careful not to overmix.

  6. Divide batter evenly into muffin cups. Sprinkle with coarse sugar if desired.

  7. Bake 20–25 minutes, until a toothpick comes out clean.

  8. Cool slightly before serving.
