Cranberry Pecan Chicken Salad

Ingredients

• 3 cups cooked chicken, chopped or shredded
• ¾ cup mayo
• 1 tbsp Dijon mustard
• 1 tbsp lemon juice
• ½ tsp garlic powder
• ½ tsp salt
• ¼ tsp black pepper
• ½ cup dried cranberries
• ½ cup chopped pecans (toasted if possible)
• 2 green onions, thinly sliced
• Optional: 1 stalk celery, finely diced
• Optional: ¼ cup sour cream or Greek yogurt for extra creaminess


Instructions

  1. In a large bowl, whisk together mayo, Dijon, lemon juice, garlic powder, salt, and pepper.

  2. Add chicken, cranberries, pecans, green onions, and celery if using.

  3. Toss until fully combined. Taste and adjust seasoning.

  4. Chill at least 30 minutes so the flavors get all cozy with each other.
