Creamy Cajun Shrimp and Spinach Orzo

Ingredients

For the Shrimp

  • 1 lb large shrimp, peeled & deveined

  • 1 tbsp olive oil

  • 1 tbsp Cajun seasoning

  • ½ tsp smoked paprika

  • Salt & pepper to taste

For the Orzo

  • 3 tbsp butter

  • 4 cloves garlic, minced

  • 1 small onion, diced

  • 1 ½ cups orzo pasta

  • 3 cups chicken broth

  • ½ cup heavy cream

  • 2 cups fresh spinach

  • ½ cup grated Parmesan cheese

  • 1 tsp lemon juice

  • Fresh parsley, chopped (for garnish)


Instructions

1. Season and Cook the Shrimp

  1. Toss shrimp with Cajun seasoning, smoked paprika, salt, and pepper.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Cook shrimp 2–3 minutes per side until pink and cooked through. Remove and set aside.


2. Cook the Orzo

  1. In the same skillet, melt butter and sauté onions and garlic for 2–3 minutes.

  2. Add orzo and toast for 1–2 minutes.

  3. Pour in chicken broth and bring to a simmer.

  4. Cook, stirring occasionally, until orzo is tender (about 8–10 minutes).


3. Make it Creamy

  1. Stir in heavy cream, Parmesan, and lemon juice.

  2. Add spinach and cook until wilted.

  3. Return shrimp to the skillet and toss everything together until fully coated.


4. Serve

Garnish with fresh parsley and extra Parmesan. Serve hot.
