Creamy Chicken and Bacon Gnocchi Skillet
Ingredients

1 lb potato gnocchi (store-bought or homemade)

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and black pepper, to taste

6 slices bacon, chopped

3 cloves garlic, minced
-
1 cup heavy cream
-
½ cup grated Parmesan cheese
-
½ tsp dried thyme or Italian seasoning
-
2 cups baby spinach (optional, for color and nutrition)

2 tbsp chopped parsley, for garnish
Instructions

Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper.
Cook chicken for 4–5 minutes until golden and cooked through. Remove and set aside. -
Cook the Bacon:
In the same skillet, add chopped bacon and cook until crispy. Remove and drain on paper towels, leaving a little bacon fat in the skillet. -
Cook the Gnocchi:
Add gnocchi to the skillet and sauté 2–3 minutes until slightly golden. -
Make the Creamy Sauce:
Lower heat to medium and add garlic, cooking 30 seconds until fragrant.
Pour in heavy cream, stir in Parmesan cheese, and season with thyme or Italian seasoning. Simmer 2–3 minutes until sauce thickens slightly. -
Combine Everything:
Return chicken and bacon to the skillet. Add spinach, if using. Toss to coat everything evenly in the creamy sauce. -
Serve:
Garnish with chopped parsley and extra Parmesan. Serve hot straight from the skillet for ultimate comfort.
