1 lb ground chicken

1/4 cup panko breadcrumbs

1 egg

2 cloves garlic, minced

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil
For the sauce:

1 cup coconut milk

2 tbsp lime juice

1 tsp lime zest

1 tsp soy sauce or fish sauce

1/2 tsp ginger, grated

1/4 tsp red pepper flakes (optional)

1 tbsp cilantro, chopped (for garnish)

Instructions

Preheat oven to 400°F (200°C).

In a bowl, mix ground chicken, panko, egg, garlic, salt, and pepper. Form into 1–1.5 inch meatballs.

Heat olive oil in a skillet over medium heat and brown meatballs 2–3 min per side. (Alternatively, bake meatballs 12–15 min.)

In a saucepan, combine coconut milk, lime juice, lime zest, soy sauce/fish sauce, ginger, and red pepper flakes. Simmer 5 min.

Add browned meatballs to the sauce and simmer 5–7 min until cooked through.

Garnish with chopped cilantro and serve over rice, noodles, or vegetables.
