Creamy Garlic Butter Tuscan Salmon
Ingredients

4 salmon fillets (about 6 oz each)

Salt and black pepper, to taste

2 tbsp olive oil

2 tbsp butter
-
5 cloves garlic, minced

1 cup heavy cream
-
½ cup chicken broth
-
½ cup grated Parmesan cheese

1 tsp Italian seasoning
-
1 cup cherry tomatoes, halved

2 cups fresh spinach
-
¼ cup chopped sun-dried tomatoes (optional)

Fresh parsley, for garnish
Instructions

Season salmon on both sides with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets flesh side down for 4–5 minutes, then flip and cook another 3–4 minutes until golden and cooked through. Remove and set aside.

In the same skillet, melt butter. Add garlic and sauté for about 30 seconds until fragrant.

Pour in heavy cream, chicken broth, and Parmesan cheese. Stir and simmer until the sauce slightly thickens.

Add Italian seasoning, sun-dried tomatoes (if using), cherry tomatoes, and spinach. Cook until spinach wilts and tomatoes soften.

Return salmon to the skillet, spooning the creamy sauce over the top. Simmer 2–3 minutes to heat through.

Garnish with fresh parsley and serve warm over rice, pasta, or mashed potatoes.
