Creamy Garlic Mushroom Chicken with Rice

Ingredients

For the Chicken

  • 2 lbs chicken breasts or thighs, cut into thick strips

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt

For the Creamy Mushroom Sauce

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 10 oz mushrooms, sliced

  • 1 small onion, diced

  • 1 tbsp flour

  • 1 ½ cups chicken broth

  • 1 cup heavy cream

  • ½ cup grated parmesan

  • 1 tsp Italian seasoning

  • ½ tsp dried thyme

  • Salt & pepper to taste

  • Fresh parsley (for garnish)

For the Rice

  • 2 cups cooked white rice (or serve over butter rice)


Instructions

1. Cook the Chicken

  1. Season chicken with garlic powder, onion powder, paprika, salt, and pepper.

  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.

  3. Sear chicken 4–5 minutes per side until golden and cooked through.

  4. Remove from skillet and set aside.


2. Make the Creamy Garlic Mushroom Sauce

  1. In the same skillet, melt 2 tbsp butter.

  2. Add onions and mushrooms; cook 5–6 minutes until soft and browned.

  3. Add minced garlic and cook 1 minute.

  4. Sprinkle in flour, stir, and cook 30 seconds.

  5. Pour in chicken broth and stir until smooth.

  6. Add heavy cream, parmesan, Italian seasoning, thyme, salt, and pepper.

  7. Simmer 3–5 minutes until thickened and creamy.


3. Combine

  1. Return the chicken to the skillet and spoon sauce over the top.

  2. Simmer 2–3 minutes to allow flavors to meld.

4. Serve

Spoon creamy garlic mushroom chicken over hot rice.
Garnish with fresh parsley and extra parmesan.
