Creamy Garlic Salmon Florentine

Ingredients

For the Salmon:

  • 4 salmon fillets (about 6 oz each), skin-on or skinless

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

  • 1 tbsp butter

For the Creamy Garlic Florentine Sauce:

  • 1 tbsp butter

  • 4 garlic cloves, minced

  • 1 small shallot, finely chopped (optional)

  • 1 cup heavy cream

  • ½ cup chicken or vegetable broth

  • ½ cup grated Parmesan cheese

  • 2 cups fresh baby spinach

  • ½ cup sun-dried tomatoes (drained and chopped)

  • ½ tsp Italian seasoning

  • ¼ tsp crushed red pepper flakes (optional)

  • Juice of ½ lemon

  • Salt and pepper, to taste

  • Fresh parsley, for garnish

Instructions

1. Sear the Salmon

  1. Pat salmon fillets dry and season with salt and pepper.

  2. Heat olive oil and butter in a large skillet over medium-high heat.

  3. Add salmon fillets, skin-side down if applicable, and sear for 4–5 minutes per side, until golden and cooked through.

  4. Remove salmon and set aside on a plate.

2. Make the Creamy Garlic Florentine Sauce

  1. In the same skillet, melt 1 tbsp butter and sauté garlic and shallot for 30–60 seconds until fragrant.

  2. Pour in broth and heavy cream, stirring to combine.

  3. Add Parmesan cheese, Italian seasoning, crushed red pepper flakes, and sun-dried tomatoes.

  4. Simmer for 3–4 minutes until sauce thickens slightly.

  5. Stir in fresh spinach and cook until wilted.

  6. Squeeze in lemon juice and adjust seasoning with salt and pepper.

3. Combine and Serve

  1. Return the salmon fillets to the skillet, spooning the creamy sauce over the top.

  2. Let everything simmer together for 1–2 minutes to absorb the flavors.

  3. Garnish with fresh parsley and extra Parmesan.
