Creamy Garlic Tuscan Salmon

Ingredients

  • 4 salmon fillets (4-6 oz each), skin removed

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • Salt and black pepper to taste

  • 1 teaspoon garlic powder

  • 5-6 cloves garlic, minced

  • 1 medium yellow onion, diced

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped

  • 3 cups fresh baby spinach

  • 1/2 cup freshly grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • 1 tablespoon cornstarch (optional, for thickening)

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the salmon: Pat salmon fillets dry and season both sides with salt, pepper, and garlic powder.

  2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and sear for 3-4 minutes per side until golden brown with a nice crust. Remove salmon from pan and set aside on a plate.

  3. Cook aromatics: Reduce heat to medium and add butter to the same skillet. Add diced onion and minced garlic, cooking until fragrant and onion is softened, about 2-3 minutes.

  4. Add sun-dried tomatoes: Add chopped sun-dried tomatoes to the pan and cook for 1-2 minutes to release their flavors.

  5. Create the cream sauce: Pour in chicken broth and let it bubble for 1-2 minutes. Add heavy cream, Italian seasoning, and bring to a gentle simmer. Season with salt and pepper to taste.

  6. Add spinach and cheese: Stir in baby spinach and let it wilt for about 30 seconds. Add Parmesan cheese and stir until melted. If desired, whisk in cornstarch for a thicker sauce.

  7. Finish the dish: Return salmon fillets to the skillet, spooning sauce over each piece. Simmer for 2-3 minutes until salmon is heated through and sauce has thickened slightly.

  8. Serve: Garnish with fresh parsley and serve immediately. This pairs well with pasta, rice, or steamed vegetables.
