Ingredients

1 medium yellow onion, diced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup sun-dried tomatoes (oil-packed), drained and chopped

Instructions

Season the salmon: Pat salmon fillets dry and season both sides with salt, pepper, and garlic powder.

Sear the salmon: Heat olive oil in a large skillet over medium-high heat. Add salmon fillets and sear for 3-4 minutes per side until golden brown with a nice crust. Remove salmon from pan and set aside on a plate.

Cook aromatics: Reduce heat to medium and add butter to the same skillet. Add diced onion and minced garlic, cooking until fragrant and onion is softened, about 2-3 minutes.
