Creamy Gnocchi Soup

Ingredients

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 3 garlic cloves, minced

  • 1 lb chicken breast, diced (optional)

  • 1 tsp Italian seasoning

  • ½ tsp dried thyme

  • ¼ tsp black pepper

  • ¼ cup flour

  • 4 cups chicken broth

  • 2 cups half-and-half or heavy cream

  • 1 (16 oz) package potato gnocchi

  • 2 cups fresh spinach, chopped

  • ½ cup grated parmesan

  • Salt to taste


Instructions

  1. Sauté aromatics: In a large pot, heat butter and olive oil over medium heat. Add onion, carrots, and celery. Cook 5 minutes until softened.

  2. Add garlic & chicken: Stir in garlic and diced chicken. Cook until chicken is lightly browned.

  3. Season & thicken: Add Italian seasoning, thyme, and pepper. Sprinkle flour over the mixture and stir to coat. Cook 1 minute.

  4. Add broth: Slowly pour in chicken broth, stirring constantly to remove lumps.

  5. Simmer: Bring to a gentle boil, then reduce heat and simmer 10 minutes.

  6. Add cream & gnocchi: Stir in the cream and add gnocchi. Cook 4–5 minutes until the gnocchi floats and thickens the soup.

  7. Finish: Stir in parmesan and chopped spinach. Cook until spinach wilts. Taste and add salt if needed.

  8. Serve: Ladle into bowls and top with extra parmesan or cracked pepper.
