Ingredients
For the Casserole

12 oz egg noodles
-
1 lb ground turkey
-
1 tbsp olive oil (if needed)

1 medium onion, diced
-
3 cloves garlic, minced
-
1 cup mushrooms, sliced (optional)

1 cup frozen peas
-
1 cup frozen corn
-
1 can (10.5 oz) cream of mushroom soup
-
1 cup sour cream
-
½ cup milk or chicken broth
-
1 cup shredded cheddar cheese
-
1 cup mozzarella cheese (or Monterey Jack)
-
1 tsp paprika
-
1 tsp dried parsley
-
½ tsp thyme
-
Salt & pepper, to taste
For the Topping
-
½ cup breadcrumbs
-
2 tbsp melted butter
-
¼ cup grated Parmesan
Instructions
1. Cook the Noodles
Boil egg noodles until just al dente (they will cook more in the oven).
Drain and set aside.
2. Cook the Turkey

In a large skillet, cook ground turkey over medium heat.

Add onion and cook 3–4 minutes until soft.

Add garlic and mushrooms; cook 2 minutes.

Season with paprika, parsley, thyme, salt, and pepper.
3. Make It Creamy
Stir in:

Cream of mushroom soup

Sour cream
-
Milk or chicken broth
Mix until smooth and creamy.
Then stir in:

Frozen peas
-
Frozen corn
-
Cheddar cheese
-
Mozzarella
Let melt for 1–2 minutes.
4. Combine with Noodles
Add noodles to the skillet, mixing gently until everything is coated and creamy.
5. Prepare the Topping
Mix:

Breadcrumbs
-
Melted butter
-
Parmesan
6. Assemble & Bake

Preheat oven to 375°F (190°C).

Pour the casserole mixture into a greased baking dish.

Sprinkle breadcrumb topping evenly over the top.

Bake 18–22 minutes until bubbly and golden.
7. Serve
Let rest 5 minutes, then serve warm!
