Creamy Mushroom Chicken Tortellini

Ingredients

  • 1 lb (450 g) cheese tortellini (fresh or refrigerated)

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-size pieces

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • 8 oz (225 g) mushrooms, sliced

  • 1 small onion, diced

  • 1 cup heavy cream

  • 1/2 cup chicken broth

  • 1/2 cup grated Parmesan cheese

  • 1 tsp Italian seasoning

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the tortellini:
    Bring a large pot of salted water to a boil. Cook tortellini according to package directions. Drain and set aside.

  2. Cook the chicken:
    In a large skillet over medium heat, heat olive oil. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through. Remove from skillet and set aside.

  3. Sauté mushrooms and aromatics:
    In the same skillet, melt butter. Add onions and mushrooms; cook for 4–5 minutes until tender and lightly browned. Add garlic and cook for 30 seconds until fragrant.

  4. Make the creamy sauce:
    Pour in chicken broth and heavy cream. Stir in Parmesan cheese and Italian seasoning. Simmer 3–4 minutes until the sauce thickens slightly.

  5. Combine:
    Add the cooked chicken and tortellini to the skillet. Toss to coat evenly in the creamy sauce. Cook 2–3 minutes until heated through.

  6. Serve:
    Garnish with chopped parsley and extra Parmesan. Serve warm and enjoy every creamy bite!
