Ingredients

1 lb (450 g) cheese tortellini (fresh or refrigerated)

1 lb (450 g) boneless, skinless chicken breasts, cut into bite-size pieces

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

8 oz (225 g) mushrooms, sliced

1 small onion, diced
-
1 cup heavy cream
-
1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)
Instructions

Cook the tortellini:
Bring a large pot of salted water to a boil. Cook tortellini according to package directions. Drain and set aside. -
Cook the chicken:
In a large skillet over medium heat, heat olive oil. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through. Remove from skillet and set aside. -
Sauté mushrooms and aromatics:
In the same skillet, melt butter. Add onions and mushrooms; cook for 4–5 minutes until tender and lightly browned. Add garlic and cook for 30 seconds until fragrant. -
Make the creamy sauce:
Pour in chicken broth and heavy cream. Stir in Parmesan cheese and Italian seasoning. Simmer 3–4 minutes until the sauce thickens slightly. -
Combine:
Add the cooked chicken and tortellini to the skillet. Toss to coat evenly in the creamy sauce. Cook 2–3 minutes until heated through. -
Serve:
Garnish with chopped parsley and extra Parmesan. Serve warm and enjoy every creamy bite!
