Ingredients
-
4 bone-in or boneless pork chops
-
2 tbsp olive oil or butter
-
Salt and black pepper, to taste
-
1 small onion, finely chopped
-
3 cloves garlic, minced
-
8 oz (225 g) mushrooms, sliced
-
1½ cups long-grain white rice (uncooked)
-
3 cups chicken broth
-
1 cup heavy cream (or half-and-half)
-
1 tsp Italian seasoning
-
½ cup grated Parmesan cheese
-
Optional garnish: fresh parsley
Instructions
-
Sear the Pork Chops:
Season both sides of pork chops with salt and pepper.
In a large skillet or deep pan, heat olive oil over medium-high heat.
Sear pork chops for 2–3 minutes per side until golden brown. Remove and set aside. -
Sauté Aromatics:
In the same pan, add onions and garlic. Cook until fragrant, about 1 minute.
Add sliced mushrooms and sauté until tender and browned. -
Add Rice and Liquid:
Stir in rice, chicken broth, Italian seasoning, and heavy cream.
Mix well, scraping up any browned bits from the pan. -
Simmer:
Return pork chops to the skillet, nestling them into the rice mixture.
Cover and cook on low heat for 25–30 minutes, until rice is tender and liquid is mostly absorbed. -
Finish and Serve:
Stir in Parmesan cheese, and adjust seasoning if needed.
Garnish with fresh parsley and serve hot.
