Creamy Mushroom Pork Chops and Rice

Ingredients

  • 4 bone-in or boneless pork chops

  • 2 tbsp olive oil or butter

  • Salt and black pepper, to taste

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 8 oz (225 g) mushrooms, sliced

  • 1½ cups long-grain white rice (uncooked)

  • 3 cups chicken broth

  • 1 cup heavy cream (or half-and-half)

  • 1 tsp Italian seasoning

  • ½ cup grated Parmesan cheese

  • Optional garnish: fresh parsley


Instructions

  1. Sear the Pork Chops:
    Season both sides of pork chops with salt and pepper.
    In a large skillet or deep pan, heat olive oil over medium-high heat.
    Sear pork chops for 2–3 minutes per side until golden brown. Remove and set aside.

  2. Sauté Aromatics:
    In the same pan, add onions and garlic. Cook until fragrant, about 1 minute.
    Add sliced mushrooms and sauté until tender and browned.

  3. Add Rice and Liquid:
    Stir in rice, chicken broth, Italian seasoning, and heavy cream.
    Mix well, scraping up any browned bits from the pan.

  4. Simmer:
    Return pork chops to the skillet, nestling them into the rice mixture.
    Cover and cook on low heat for 25–30 minutes, until rice is tender and liquid is mostly absorbed.

  5. Finish and Serve:
    Stir in Parmesan cheese, and adjust seasoning if needed.
    Garnish with fresh parsley and serve hot.
